Friday Night Quaffing
2-4 bottles
Friday Dinner
You’ll want at least 2 bottles or a magnum per course.
Amouse-Bouche: Sweet Corn & Ramp Custard; pickled mustard seed, ramp oil, crispy prosciutto dust. Notes: texture is silky & smooth, very light; very friendly with whites.
Salad Course: Spring Garden Patch Salad: Little Gem lettcure cups & spring herbs, whipped chèvre, pickled radish, fresh peas, puffed wild rice, rye crumb, lemon-chive vinaigrette. Notes: fork & knife salad with lots of crunch; because of the chèvre, think acid forward or sweet.
Soup Course: Morel Mushroom Agnolotti in Light Chicken Consommé: Thyme, ramp chiffonade, aged parmesan. Notes: Course is very wine friendly and flexible; with richness of Consommé think brighter/vibrant reds; may want freshness/acidity of Pinot Noir; tasted with Chardonnay, if you select a white, you’ll want it to blanket the tongue.
Main Course: Red Wine Braised Beef Short Rib (Pressed & Glazed): Spring onion soubise, glazed baby carrots, crispy potato pavé, cherry balsamic veal reduction. Notes: we asked for less acidity in the reduction. Chef will remove balsamic but will keep cherry. Wines should be prepared to have a lift from the acidity of the cherry reduction.
Dessert Course: Rhubarb & Honey Cheesecake with oat crumble, poached rhubarb ribbons, vanilla bean crème fraiche. Notes: Very light and fluffy; taste leans more towards honey. Feel free to revisit any previous wines and do not worry about pairing the perfect wine. Guests have enjoyed wine for several hours and may lean toward drinking something you’ve already poured from an earlier course versus a new wine. If you have a dessert wine, please feel free to pour it.
Saturday VIP Tasting
1-2 bottles or a magnum. This wine should be unique and that doesn’t get poured during the regular tasting.
Saturday Grand Tasting
Approximately 12 bottles. Many vintners bring a couple of different wines to pour during the event.
Boutique Sales
New to this year! The most consistent feedback from our attendees is that they want to buy the wine you are pouring! Please choose 12 bottles to be sold at the boutique. They can all be the same wine if you want to showcase one or you can break it up.

After a brief program, we’ll move straight into the live auction. Greg Quiroga returns as our auctioneer and does an outstanding job driving excitement and maximizing the value of each lot. While the auction generally lasts approximately two hours, seasoned vintners know that a unique, well-presented lot can spark a bidding frenzy and keep the room buzzing.
Miscellaneous Details/Notes
Friday Set-Up: The vinNEBRASKA board will be organzing & checking your wines in Thursday night/Friday morning. Please feel free to stop by if you want. We will have Marriott placing bussing tubs with ice and dump buckets on your pouring tables approximately 3:15pm. The vinNEBRASKA team will handle moving all to your pouring tables for VIP & general tasting hours. Should you have anything left from the tasting hour, you are welcome to bring that to the table. You’ll have 30-45 minutes to get your tasting tables set-up how you want them.
Live Auction Item: We ask all participating vintners to contribute a live auction lot. Many of you are familiar with what works well at vinNEBRASKA, and historically, lots that include a unique or experiential component tend to generate the strongest bidding.
Feel free to partner with other vintners in your area, whether or not they are attending, to build a package that creates energy and excitement during the auction.
Silent Auction Item: You are invited but not required to provide a silent auction item. Many vintners have provided an exclusive bottle or set of bottles. One crafty vintner paired their bottle of wine with a gift card to a local butcher in Omaha. Again, this is not required.
Additional Notes for Auction lots: If your lot includes a tasting, winery visit, or stay, please include an expiration date and any restrictions (such as blackout dates). Certificates can be email to hallie@vinnebraska.com or mailed to vinNEBRASKA attn: Hallie Talley, 338 N 115th St, Omaha, NE 68154. If your auction lot includes wine bottles, they may be shipped either through your distributor or mailed using the 338 N 115th St address.
For all auction lots, please indicate a value on the vintner wine planning form.
Promotion during the Live Auction: During the live auction, you will be invited on stage to help promote your auction lot. Our auctioneer will handle the bidding and formal description, while you share what makes your lot unique.
A static image of your winery will be displayed on the screens during your time on stage. Please send a high-resolution image (jpeg or png) to hallie@vinnebraska.com to be used during the auction.
General Promotion: Your logos and winery name may appear throughout various marketing materials. Please send a high-resolution logo (jpeg or png) and the proper name for your winery to hallie@vinnebraska.com
